Apple Harvest Cake
Apple Harvest Cake 2 1/3 cups sugar 3 whole eggs 1 1/4 cups vegetable oil 1/4 cup orange juice 1 teaspoon vanilla 3 cups flour 1/4 teaspoon salt 1 teaspoon baking powder 1 teaspoon cinnamon 1 cup apples, peeled chopped small 1 cup raisins 2/3 cup nuts 2 Tablespoons butter 1 cup sugar 1/2 teaspoon baking soda 1/2 cup buttermilk Whip sugar and eggs on high for 3-5 minutes. Drizzle in oil slowly. Add orange juice and vanilla. Sift together dry ingredients and mix in by thirds...do not over mix. Fold in fruit and nuts. Divide between 2 prepared 10" round cake pans. Bake at 300* for 30-35 minutes, until center is set. Bring butter, sugar, baking soda, and buttermilk to a boil for syrup. (Sour milk may be substituted for buttermilk: 1/2 cup milk+1/2 teaspoon vinegar) Cool cakes 2-3 minutes, then gently poke holes in tops and pour syrup over. Chill cakes, frost with cream cheese frosting.
