Souffled Apple Pancake
Souffléd Apple Pancakes 2 apples 4 tablespoons butter 3/4 cup half and half 1/2 cup flour 1/4 teaspoon salt 3 egg yolks 2 tablespoons butter, melted 3 egg whites pinch cream of tartar salt 1 tablespoon sugar Saute apples in 4 tablespoons butter for 6 minutes, until tender. Set aside. Preheat broiler. Combine half-and half, flour, salt and egg yolks; stir in melted butter. In a separate bowl, beat egg whites with tartar and salt until they hold soft peaks. Stir 1/4 whites into batter to lighten; then fold in remaining whites. Heat a well-buttered 10" ovenproof skillet until hot. Add half of batter, spreading evenly, and cook for 3 minutes. Arrange 1/2 of apples over batter and place under pre-heated broiler for 1-2 minutes. Repeat for second pancake, serve with fruit or syrup.
