Winter Squash Apple Soup

Winter Squash Apple Soup Yields: 6 Servings 4 large shallot, chopped 1 rib celery, chopped 1 carrot, chopped small 1 tablespoon butter 4 cups squash puree 2 medium tart green apple 3 cups chicken broth 1/4 teaspoon ground ginger 1/2 teaspoon ground sage Salt & pepper Combine butter, shallot, celery, and carrot in large saucepan. Cook for 5 minutes, until carrot is beginning to become tender. Add apple and 2 cups of the broth. Bring to a boil. Reduce heat and simmer for 10 minutes or until apple and carrots are very soft. Puree, then add remaining broth and squash puree. Add spices and season to taste. Simmer 10 minutes to combine flavors, adding broth to achieve desired consistency.
